Chicken & Dumplings
chicken broth :
- chopped celery
- chopped onion
- ground chicken
- one tablespoon(s) of butter
- one egg
- onepinch of baking powder
- half t. wheat cereal (wheat cream or flour)
Cook the chicken in the water with the carrots, celery and onion. When the chicken is tender, remove and drain. Save broth, carrots & chicken.
Cut the chicken into small pieces and add it to the broth. Make dumplings by mixing the dumpling ingredients together and rolling the mixture into balls, making sure they are not too hard, but firm.
While broth with chicken is boiling, add dumplings by tablespoons. Boil for five minutes. Shock the dumplings by adding a cup of cold water. Put the lid on and simmer for about fifteen minutes (until the dumplings are soft and not hard inside). Add cooked carrots, if desired.
