Homemade corn casserole
Ingredients
- one tablespoon olive oil
- one small onion, diced
- half red bell pepper, chopped
- one pound ground beef
- one t minced garlic
- one t chili powder
- a quarter t cayenne pepper
- salt also ground black pepper
- half c frozen corn
- one c Mexican cheese blend, divided
- one c salsa
- one c cornmeal
- ¾ teaspoon of salt
- half teaspoon baking soda
- one cup milk
- two beaten eggs
Step by step
Preheat oven four hundred twenty four degrees F (two hundred twenty degrees C).
Heat olive oil in a skillet on medium-high heat. Add onion and red pepper; sauté until softened, five to seven minutes. Adding ground beef, garlic, chili powder, cayenne pepper, salt also black pepper. Cook, stirring, until beef is browned and crumbly, five to seven minutes.
Stir corn into beef mixture and stir to thaw, about three minutes. Drain and discard the fat. Add about 1/4 of the grated Mexican cheese mixture and mix well. Pour the meat sauce into a 9 x 13 inch casserole dish. Cover the meat with a thin layer of salsa.
Mixing cornmeal, salt and baking soda in bowl. Adding milk and eggs; stir to well blended. Spoon cornmeal mixture over salsa layer and top with remaining shredded Mexican cheese mixture.
Bake in preheated oven until top is golden brown, about thirty minutes
