Apple Pie Enchiladas
- one can (21 ounces) apple pie filling
- six (8 inch) flour tortillas
- one teaspoon ground cinnamon
- half cup of butter
- half cup white sugar
- half cup brown sugar
- half cup of water
Step by step
Preheat oven three hundred fifty degrees F (175 degrees C). Butter two-quart baking dish.
Spoon about a quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon; roll up, tucking in the edges; and place seam side down in prepared dish.
In a medium saucepan over medium heat, combine the butter, white sugar, brown sugar and water. Bring to boil, stirring constantly; lower the heat and simmer for three minutes. Pour the sauce over the enchiladas and let sit for thirty minutes.
Bake in preheated oven for twenty minutes, or until golden brown.
