FRIED POTATOES & ONIONS
- two lbs russet potatoes
- one yellow onion (grated or finely chopped)
- a quarter cup olive oil (more as needed, enough to cover the bottom of your pan)
- half tsp every, salt // pepper (to taste)
- half tsp garlic powder
- half tsp paprika
Grate yellow or white onion and wash and cutting potatoes into cubes.

Heat the cooking oil in a large skillet, skillet or cast iron skillet over medium heat.
Adding grated onions, cube potatoes & seasoning (salt, pepper, smok paprika and garlic powder – unless you want to use minced garlic, reserve the minced garlic for cooking time. cooking uncovered).
Stir the ingredients together then spread them in an even layer on the bottom of your pan. Cover with an airtight lid and cook for ten minutes or until golden brown.
After the ten mn of covered cooking, uncover and stir the potatoes and onions (add minced garlic, if using). Leave uncovered to finish for about five to ten minutes, or until your potatoes are fork tender and have reached your desired level of tenderness.

Remove from heat when the potatoes are cooked and serve directly.
