Singing Hinnie

Ingredients:

  • 450 g (3.5 cups) all-purpose flour
  • ¼ tsp bicarbonate of soda
  • ½ tsp cream of tartar
  • ½ tsp salt
  • 110 g (½ cup) cold butter
  • 110 g (½ cup) lard
  • 175 g (1 ¼ cup) currants
  • Milk
  • Oil or butter for frying

Instructions:

  1. Sift together the flour, bicarbonate of soda, cream of tartar, and salt.
  2. Rub in the cold butter and lard with the dry ingredients until the mixture resembles fine crumbs.
  3. Mix in the dried currants.
  4. Add enough milk to create a firm dough. Roll out the dough and cut it into rounds, lightly pressing down on each round with your hand.
  5. Grease a heated griddle with oil and fry the cakes, turning them when the undersides start to brown.
